Paneer & Cabbage Stuffed Eggplant Rolls in Tomato Gravy

Do you like your carrots??
Well I like them..but my son has a different take on it. The other day he saw them in his dinner. He asked me, " Mommy, Why you want carrots?"
I said, "Carrots are good for health, You will become strong, you should eat them"
for which he promtly required, "Mommy..I am not a Rabbit".

He has his sweet innocent reasons for everything. 

The other day his friend pushed him. He came back complaining to me. So I told him that he also needs to push them if this continues and only then his friend will stop it eventually. He can't be quiet all the time. To which he replied, "Mommy, I am not *(his friends name)* to push and hit. I cannot do it. It's bad to hit ".
Wow..So I realized that my 5 year old son is growing big to have an opinion of his own. Awesome!! I love his attitude.So even kids do have a mind and opinion of their own.

Coming to this recipe you are about to read.  This recipe came up all of a sudden, I had this idea and thought why not try it. So I took out my camera and went clicking. It went out much without too much planning. I used just the ingredients what I had at that moment and it turned out well. So here it goes.

Ingredients:(for 2)
For the Roll:
1 medium sized eggplant
1/2 cup crumbled fresh paneer
1/2 cup shredded cabbage
Chopped cilantro
Red chilli powder to taste
Garam Masala powder - 1 tsp
Coriander powder- 1 tsp
Salt and a pinch of sugar

For the Gravy:

In Blender:
[ 5 medium sized tomatoes
1 Carrot
10 roasted Pistachios
2 cloves
1 cardamom
1 inch ginger
few garlic pods
2 Green Chilli    ]

Mustard Seeds - 1 Tsp
Cumin powder- 2 tsp
Dried Kasuri methi- 1 tbsp
Turmeric powder
Shredded Cheese
salt and a pinch of sugar

Procedure:


Cut the Brinjal/Eggplant vertically like almost a quarter centimeter thick. Spread salt on it and let it sit for 30 minutes. Then take each eggplant , wash it/run it under water to remove all excess salt. Wipe it with towel to remove all extra moisture,Take a pan, roast it on both sides with few drops of oil until light brown or if u have a grill pan..better use it.

Meanwhile blanch tomatoes and carrot(chop it and throw them in the same water to soften them up) and peel them.

Run the blanched tomatoes, carrots and all ingredients mentioned under gravy in a blender into a fine paste.

Take a pan, pour some oil/butter. When hot , add mustard seeds, fine paste, Turmeric powder, Cumin powder, salt, pinch of sugar.(Add a little red chilli powder if it's less spicy). Add some water, let it cook for 5 to 8 mins on medium heat. In the end add crushed Kasuri methi.[Note: You could pour some fresh cream in the end for a richer taste]


The Filling:
Mix all ingredients under filling and keep aside...



Take an oven safe dish and grease it. 


Take a small portion of filling in place it on the eggplant and roll it.  



Place all eggplant rolls in the oven safe dish, pour some gravy enough to cover it and place it in a preheated oven at 200 degrees C for ten mins. 


 After 8 minutes, remove pan sprinkle shredded cheese of your choice(I used Amul processed Cheese). Put it back on oven for a couple more minutes.


Serve it with Jeera rice , use more gravy if required. hmmmm...DIVINE!

Easy Peasy Method for Jowar/Sorghum roti and Green Apple Tokku recipe

I have always loved north karnataka food. My husband being from north karnataka ,helped me to explore their cuisine to a whole different dimension. Everytime I'm in my in-laws house, I enjoy the variety of flavours I get to taste. The main staple dish in north karnataka cuisine is Jowar/Sorghum flour roti. Making this roti is itself a talent which I don't seem to possess. It requires a lot of patience and practice to acquire the traditional art of flattening the roti with the palm.
So I came up with this idea of making this roti after a few trial and errors. It's an easy way to learn for all beginners.
Ingredients:
Jowar flour, salt, hot hot water to mix the flour , wax sheets or any other  non stick sheets.

Procedure:
Follow the four step video.(Sorry for the bad quality videos!)

Step 1: Pour enough hot(water needs to be really hot) water slowly into the flour(mixed with salt to taste) mixing it until everything is moistened. I usually eyeball it and don't follow any measurements. Cover bowl with a lid.



Step 2: When flour is cool enough to touch but still hot, knead it properly like you would mix chapathi dough.    Take a min or 2 to properly knead the dough. This step is important. Ofcourse I haven't covered the whole kneading process in the video.In this step you can add a little water if required. Cover it and leave it for 5 mins. In the meantime heat your pan(needs to be hot, keep the setting to more than medium heat) and get out your wax sheets.


Step 3: Place a ball of dough between 2 sheets of wax paper having dusted it with wheat flour/jowar flour generously and lightly flattening it with your palms. Roll it with a rolling pin, dusting it after every few rolls and tossing it over and making sure it's not sticking to the paper. Dust flour if it feels sticky. 





Step 4: Your pan must be now hot enough to make roti's. Place rolled dough on pan, take a paper towel/thin cloth dipped in water. Pat the roti with the wet towel. Once you see bubbles, flip it and pat it with wet towel again. Cook  both sides until done.




It's now ready to serve with a curry and sliced onions.



Green Apple Tokku:

This tokku is a green apple version of the yummy mango tokku my mom prepares.I really love the tangy flavor of this recipe. This recipe could also be done with raw mangoes.

To all those who don't know what a tokku is- it's very similar to pickle but different . You can use it just like how you use a pickle and is also lasts for a few weeks.

Ingredients:
Oil
Mustard - 2 tsp
Green Apple - 4
Red Chilli Powder - 1 tbsp + 2 tsp
Jaggery - around half a cup
salt


Procedure:
Grate the green apple. You can leave the skin on.
Heat oil in a pan. Oil needs to be a little more than normally necessary. 
When oil heats up, add mustard seeds.
When mustard seeds crackle, add grated apple and saute it. 
When half cooked add chilli powder, jaggery, salt. Keep sauteing it until properly cooked and excess oil left out. 
Store in an airtight bottle. Can be kept in refrigerator to make it last really long. 

Note: 
*Adjust salt, chilli powder and jaggery according to your taste and preferences.
*If excess oil doesn't ooze out, it means the oil was less. Do not fret. Just saute it until properly cooked.

Refashioned



Hi there, 3 things I need to mention. Okay, Let's make it 6.

1. My parents had been here in US with us for 50 days on vacation, and we had an amazing time.

2. I ended up being lazy coz you know, mom used to do all the work around the house! And now that they are gone back to India..:(((

3. On our 2nd visit to disney land , Ankush enjoyed there a lot. I mean really a lot.

4. Ankush says 'wheels on the bus' song in his own sweet way, although annoying sometimes when it gets repetitive for long time , I derive great deal of gratification seeing him sing with his 'cute as a puppy' actions.

The next  2 things will be mentioned later in this post. Oops! See I told ya (remember #2), I got lazy. I procrastinate, even writing!


                     I had mentioned in my blog earlier that I don't like wasting things and about the 3 R's - reuse, reduce, recycle. Well here are some more examples.

I did this makeover for the wall clock using the packaging foam plates that comes with your vegetables in your grocery store.Cut out the designs , stick it around the clock and Voila, that's the most simple makeover.





The next 2 projects are 'Mom and Me' projects. Coz we both did it. I had borrowed my friends sewing machine . No we did not stitch this skirt, then why the machine???
Well , It was actually a white jeans pant, which we converted into a skirt. The white and black patterned material is store bought.
 It's now refashioned and ready to wear! See don't dispose your old clothes, you can somehow try and make it work in some or the other way.


This following bag I call it as a 'Mom and Dad' bag. Nopes, my dad doesn't know to sew, neither did he help in the project. It's still 'Mom and Dad' bag in the 'Mom and Me' project. Coz we did this bag using my Mom's chudidhar/suit and the inner lining of this bag with my dad's casual pants. Both of their clothes had accidents while ironing. And we thought why not use them instead of throwing away and we sew this bag.



See, before throwing away anything , think twice if you can come up with a way to use it, and surely you will get some amazing ideas. 

Here comes the next 2 things that I didn't mention earlier and has nothing to do with the 'Refashioned' topic.

5. I made these clay Ganesha idols for this Vinayaka/Ganesha chaturthi pooja. My son saw the idols and he said 'Gaaeesha'. 


6. Here is the bounty of Wheatgrass that I grew in my  balcony. The pot is nothing but a milk carton cut into half. See.... another reuse.



And here's the recipe for the very healthy juice that I made out of it.

Put WheatGrass in your blender. Put some water, run it, strain the juice. Put the grass back into the blender and keep repeating the process until almost whitish green fibre remains. Now stir in some honey and lemon juice to the juice and enjoy . One pot of grass was enough for 4 .

Restaurant Review Of Village Tavern (For Vegetarians)

OK! So me and Hubby are 'good food' hunters! Thank God for our mutual love for all type of food(only vegetarian), we don't mind exploring all the restaurants in our vicinity. But being Vegetarians(VG) and being in US, you do not have myriad foods to savor . But the good and best part is that with almost every restaurant having atleast one or two vegetarian dishes to offer, you get to taste and enjoy foods from different cuisine. So I finally thought of making this section of restaurant reviews to help all my veggie friends out there.
Should have started this long time back, but like they say 'Better Late than Never'.

Review of Village Tavern (For Vegetarians):
We had been to this restaurant on july 4th for lunch. This is located in Pembroke Pines, Florida. Not many branches do they have in US.

The feel of the restaurant is very cozy, but there wasn't much so village-y about it though. Like most in US, the service was pretty good. Though the one thing I do not like in any restaurant for that matter is that they are always in a hurry to take away the menu as soon as they get the order  !!

Coming to food, We ordered Sweet Potato fries for starters. It tasted pretty good, but it wasn't seasoned with salt or pepper which we can always season it according to our taste.My very  picky eater of a son also liked it!
The other starters for vegetarians on menu were Bruschetta (which is one of my fav dishes) , Spinach tortilla dip, freshly fried potato chips. Good number of options are available in starters. The only salad available for VG is Greek Salad.



For our main course, we ordered Spaghetti Squash and Zucchini. This was some kind of a preparation with broccoli , cauliflower, shaved zucchini and squash, tomatoes and pine nuts. It tasted wonderful on it's own, low calorie food. My biggest problem with this was the price. It was priced a big $13.50. I do not mind paying that much money if it had a good portion size. But this dish had no protein of any kind, nor were there any whole grain, only the good taste. It wasn't worth the price!


The other main dish was the small sized, pretty thin crust Margherita Pizza made with mozarella, reggiano parmesan ,tomatoes and basil. Though simple it looks, the taste was very amazing. Priced at $8.75. 


The other main dishes on the menu were veggie burger, portbella mushroom sandwich. Me not a fan of burger, hence did not order that. There were also other side items like corn, beans, mashed potatoes, sauteed spinach, asparagus, loaded baked potato. Lots of good choices of beers and cocktails available. You can also see a variety of desserts on the menu.

So yes, there were quite a few good options for us VG's.The 3 dishes we ordered were enough to fill our small tummies. I still felt the price is high considering the portion sizes. The taste , service was very good. 

Will I visit this again?
Definately, when my wallet feels heavy! Occasionally ,yes . Regularly, No.

Mustardy Egg Omelette Sandwich and the 3 R's

It's a really funny thing to see someone sleep with their mouth open. Picture it on someone, ..... someone funny and your gonna laugh. Well, I happened to sleep this for few days last week. OK , Don't laugh. I had a cold. A damn cold which made my nose stuffy.
                If you've experienced this then you know that your mouth gets really dry if you sleep with it open. The first night I slept this way I had dreamed that I was so intensely thirsty, my mouth kept feeling so dry and I kept drinking gallons of water and yet my mouth still felt so dry and thirsty. And I kept searching for more water and I kept drinking and the same thirsty feeling. Thank God, then the alarm ran!
                The second night I slept this way, I again had dreamed that my mouth felt very dry and thirsty , And I was looking for water everywhere and I couldn't find any. And then I wasn't able to speak. And I kept looking and looking and I couldn't find any water. Damn!!! and again thank God that the alarm ran!
                I could only come to one conclusion from all of this. That I dream only during the early hours of the morning before I am about to get up. Right?? I guess all of us do the same. Dreams are so weird. I dream every night. I sometimes pray that I sleep dreamless. Bcoz they are always weird.

OK so coming to the sandwich I'm about to write today.
Its more an omelette between 2 pieces of bread, but with a little twist in making the omelette. The omelette is good and different by itself .

Ingredients for omelette: (Serves 2)
2 Large eggs
Half a big tomato chopped finely
Half of a potato boiled and finely chopped
1 big bulb of garlic chopped
6 leaves of mint
2 green chilli cut half
2 tsps of spicy brown mustard (use 1 tsp for just eating the omelette by itself)
pinch of sugar
salt to taste


Put some oil on a heated pan, fry the garlic, green chilli first for a min or so. Then add the potato, tomato, pudina in that order, fry for few secs, then add the spicy brown mustard, salt and a pinch of sugar to taste fry until everything is incorporated. spread everything evenly on pan, then pour 2 beaten eggs onto pan to make the omelette. Cook till done. 


For the sandwich part:
Ingredients: (serves 2)
4 slices of bread of your choice (I used whole grain honey oatmeal bread),
2 slices of your favorite cheese
chopped lettuce
Any sauce of your choice( ketchup, tamarind sauce, mint chutney or you could even try my world famous cranberry sauce!! )

Spread 2 slices of bread on a pan after dropping a few drops of oil on the pan on med heat. Roughly break it into pieces and spread them on the bread. Use a whole 2 slices if you don't mind all the extra calories/fat. Now cover it with a lid so as to lightly melt the cheese. Remove bread once it is lightly browned so as to have a light crunch.



Now place a piece of omelette on the bread slice, then chopped lettuce(adding sliced tomatoes at this point would be good), then spread your choice of sauce on this which I completely forgot before I took the picture. Then place the other slice of bread over this.


And then bite into it for that mustardy feeling..



OK ,On a totally, totally , totally, different context, a context so different that is so outworldly. Yes , you got it. The same old husband and wife conversations, or jokes you may say. This silly talk between me and hubby the other day happened when some silly thing happened and I so  asked him in a silly way: "Are you mad? "

Guess what he replied??

If there's any letter thats in fashion these days, its the letter 'R', that too not once, but thrice. ;))
It's the 3 R's - Recycle, Reuse, Reduce which just means that by recycling all our used stuff, reusing all the possible things for various purposes, and reducing our waste we do good for our planet, and in turn for our future generations.
All of us should keep these things in mind when we go out to shop. Agreed most people are spontaneous shoppers , with all the colorful, beautiful , attractive stuff we get in shops which exactly what the manufacturers target. We quite often end up buying stuff which we are hardly in need of. We either buy 'coz we either liked the look of it or just in case we might need it in future.
I have in recent months developed this habit of resisting this temptation. The moment I feel the need to buy anything, I pause. I pause and give myself a minute or two to consider ,which is pretty much enough to stall the need to buy or procrastinates my shopping which by then I loose the interest. Which is a good thing.
I was in need of a shoe stand to be placed in my closet. I kept delaying buying it until I got the idea to make one with all the diaper boxes I had. I made the below stand with just diaper boxes and duct tape.

See you can make use of so many of the waste stuff at home. I recently used milk cartons cut into half as pots for my gardening (I shall put up pics and tutorial in future). All the old clothes, boxes could generally be put to good use.
I am sure all you have ideas of your own to recycle and reuse stuff at home. Please do teach your kids to use less. For Eg: Instead of using a whole sheet of paper towel, you could teach them to use half of a sheet of paper towel at a time (which is actually the amount necessary if you observe). Don't worry, it's not being frugal, your just teaching them to be sensible towards the environment.

So always remember the 3 R's.

Veggie Breakfast Rolls with Cranberry Sauce

So I took a pic,

About the breakfast roll recipe , It's a recipe I came about last sunday morning, when I felt so fresh that I wanted to make something new. I had just bought these amazing looking sun dried tomato and spinach tortillas and I thought of combining them and the cranberry sauce and the lonely eggs laying peacefully in the fridge. So I came up with this scrumptious and colorful roll for a bright, happy sunday morning.

The Recipe:
Ingredients: 
(For 2 rolls)

Tortillas - 2
Eggs - 1 or 2 (depending on the size of the tortilla)
Chopped tomatoes
Chopped cilantro leaves

For the Stuffing:
Half of a big bell pepper , finely chopped
Approx 2 -1.5" * 1.5 " pieces of Tofu, finely chopped
2 big bulbs of garlic
2 green chillies
1 tsp of Paprika powder
1 to 2 tsp of curry powder
pinch of turmeric
2 Pinch of sugar
salt to taste 

Method:

Stuffing: 
*  Take around 3 tsp or more if you like , of oil in a pan. Let it heat over medium.
*  Add green chilli and chopped garlic, saute until lightly brown.
*  Then add bell pepper, saute it lighly , should remain crunchy.
*  Add  chopped tofu , sprinkle paprika powder (or red chilli powder if you wish), curry powder (or any other masala powder), sugar , salt, turmeric.
*  Saute it for 2 mins approx.
*  You are done!!

Well, not yet...U need to do the rest like below. 


* Beat eggs in a bowl along with a pinch of salt and pepper. Keep Aside.
*  Heat pan over medium heat. When it's ready, place a store bought tortilla on it and just roast it for few secs only on one side. Remove it from pan.
*  Now spread oil on pan, now pour the eggs onto the pan, after few secs, place the heated side of tortilla onto the egg. 
*  When the eggs are cooked, flip the tortilla- egg combi and heat the other side(the tortilla side) for few secs. Do not overcook or brown the tortilla coz it will be difficult to roll it.
*  Remove from pan and place it on a plate.


For the assembly:

*  Spread the Cranberry Sauce on the egg side. For the cranberry sauce recipe, look here. If you do not have it, spread ketchup or any other sauce of your choice.
*  Now place the stuffing on it and sprinkle some chopped tomatoes and cilantro leaves on it. Place the stuffing towards a side and not in the center which helps in rolling.Leave an inch on the bottom.
*  Now fold the bottom inch and then roll it. 
*  You can use a paper towel/tissue paper on the bottom half of it to help it to stay rolled.
* And if you do not have access to store bought tortillas, you could always make chapathis with maida(All purpose flour) or wheat , of your choice.


And now for the most important step, which you shouldn't miss.

Simple n' Tangy n' Sweet - Cranberry Sauce (Indian way)

OK! So I was so puzzled about how to start this post . I was so out of words all of a sudden that I begged hubby dear to shower some ideas.
This is what he said "New year,new recipe, berries, cranberries :))". Thanks Hun'.

I finally made up my mind to put up some recipe. I was very apprehensive for God knows what reason, to put up recipes but somehow I just thought of trying it out and somehow I remembered this experiment of mine with cranberries last year and somehow I managed to remember the recipe I attempted and somehow I again tried it out today and just felt happy about it and somehow managed to take pictures in between and somehow essayed this sentence having seven somehow's.

SO about this cranberry sauce - Cranberries are tangy / sour to taste. So a little help from spices and a bit of sweetness from sugar gives it a boost of flavor. This is a versatile sauce b'coz you can use it in many different ways just like you would use your ketchup or the tamarind chutney.

Oh you could also dip a spoon in it and lick it like you would with the tamarind chutney. Yes, I do that! Coz I love it.

So here's the recipe-

Ingredients:
12 ounces cranberries
1 tablespoon red chilli powder
1 tablespoon roasted / plain cumin powder
jaggery / sugar
salt to taste

Procedure:

Wash the cranberries , put it in a pan, fill it with enough water to cover it and boil it for almost 10 mins or so, until it softens.


Next, Add a tablespoon of red chilli powder. Mine was a very strong one. 1 tablespoon was enough to give it the amount of spice that I needed, so if yours is a milder one , you might want to add 1 tablespoon , then add more as per your taste.


Then, Add 1 tablespoon of roasted or plain cumin powder. I prefer adding the roasted cumin powder. 


Now for the sweetness you could use both sugar or jaggery. I added a tablespoon of sugar, then I suddenly remembered that I had this pack of jaggery lying there for many months unopened. So then added about 6 to 7 medium pieces of jaggery to get the required amount of sweetness. So it is upto you how much you need to add. If you are going to use only sugar you would want to start with about 3/4 or 1 cup of sugar and start from there. Add more if you like it.



Then finally add salt to taste.
Keep boiling it over medium heat until everything is cooked thoroughly , probably around 10 mins or so. Keep stirring it, and be careful , it's going to spurt all over your counter. so keep stirring it or partially cover it with a lid. 

Once it's cooked enough, cool it and put it in a blender and mix it until smooth if you want a smooth sauce or keep it as it is if you like it more chunky.


Once it is cooled down, transfer it into a dry bottle and it could be freezed for long use.


I had enough sauce to fill a jam bottle and a little more. So I put a little of it in the refrigerator and the rest went into my freezer section for future use.
This is very much like the tamarind chutney recipe itself except there is cranberries in it.
This sauce could be used as a dipping sauce for samosas, pakoras, etc, also to make bhel, sandwiches and much more.
Someday I'l show you all the ways I used it, i'l post it in my blog with food pictures.

DIY Sandwich-Maker Style Sandwich

Sandwiches!! Most of us can have it any time of the day and so do I. Where as some people do not have anything close to 'like' when it comes to bread.

Most of the times whenever I crave for a snack, this is the one I can think of instantly. 2 slices of bread, something to fill in and done. Oops,  sorry, not done. I like it toasted. Like the ones that comes out of a sandwich maker. But Ofcourse I do not have one, and I don't intend to buy one coz I can make one at home by using this technique!! Guess, most of you already know it. But anyways, here it goes.

First , heat a tava somewhere between low to medium heat.


Next place a few drops of oil or a small dab of butter on the pan. This step is totally optional. Now place the assembled sandwich on the tava.


Now place the flat side of any plate big enough to cover the sandwich. Totally clean the plate before using it ;))


Now either place something heavy on the plate such that it presses the sandwich or


Press the plate gently with your hands. Better wear gloves so that you won't burn your fingers.


Hold it this way for few seconds just enough to lightly brown the bread. Now flip the bread , and repeat the same procedure the other side. When placing the plate on the counter in between remember to place it upside down, so that we won't dirty it when placing it on the bread again.

Remove the sandwich and cool it for a min or two on your plate before attacking it!!

I have browned the bread a lil bit more..coz I was busy taking the pictures.


Wow, I would love to sandwich him in my arms ;))

Ugadi & Supermoon

Happy Ugadi to All.  Ugadi is the new year day for people in Karnataka and Andhra and many other regions as well but known with different name.

The most memorable thing of Ugadi for me from back home is eating of neem leaves along with jaggery. Day starts with a oil masaage with castor oil, then a nice head bath, followed by prayers. Mom used to then give me the mixture of neem leaves and jaggery before which we recite "Neem leaves are sweet, jaggery is bitter" (in kannada/telugu)  3 times.. It is to signify a year mixed  with happiness and sorrows and that both should be accepted and acknowledged equally. (Why tell it 3 times??  I Don't know! )

Traditionally, Obattu/Holige/puran poli , sweet dish is prepared on this day. A special Pachadi with neem leaves is prepared. Breaking the norm and to keep things easier I made Gulab Jamoon. Unfortunately we do not get either neem leaves or neem flowers in USA.

This is what we had today.

What a way to start the new year with the big win we had. This win for Indians is such a good news to rejoice after all the negative that is been happening around with Egypt, Libya and Japan. All we can do is pray and hope the year following will be better for them.
